Both of these wines are made with grapes grown on our estate vineyard. The influence from the morning fog and wind in the afternoon help keep these wines fresh with lively acidity!
Rosso Di Sette Fratelli: The grapes are hand-picked at dawn to capture all the fresh flavors. They are brought to the winery where they are de-stemmed and put into a closed top fermenter. We let the wine naturally warm up and spontaneously begin fermentation. Fermentation takes 7 days and peaks at 85o F. The wine is pressed off the grape skins once the perfect amount of tannin and flavor has been achieved. From here it goes through malolactic fermentation and then is aged in French oak barrels for 18 months with 35% new oak.
Bianco Di Sei Sorelle: The grapes were handpicked in the early morning to retain their vibrancy and natural flavor. At the winery, the grapes were destemmed and gently pressed into a tank ready for fermentation. Fermentation began and was completed at the very cool temperature of 55o F to retain acidity and fruitiness. The lees of the wine were stirred regularly to further enhance the richness. After fermentation, the wine was racked off its lees and put to barrel. It was then aged in neutral French oak barrels until bottling.
